Cheese Blintzes

Blintz is one of the most renowned Jewish pastries, which is mostly prepared during Shavu'ot (the Festival of Weeks). It is almost similar to crepe and can be cooked with many tasty fillings.

Ingredients:
BLINTZ INGREDIENTS
  • 4 eggs
  • 1 cup flour
  • 1/3 cup sugar
  • 3/4 cup milk
  • 1/4 cup water
  • 1 tsp vanilla
  • Pinch of salt
  • Nonstick cooking oil spray
  • Vegetable oil with a high smoke point for frying (grapeseed or peanut oil works best)
YOU WILL ALSO NEED
  • Nonstick skillet
  • FILLING INGREDIENTS
  • 1 cup lowfat ricotta cheese
  • 1 package (8 oz.) cream cheese
  • 1/4 cup sugar
  • 1 egg yolk
  • 2 tsp fresh lemon juice
  • 1 tsp vanilla
  • Pinch of salt
