Spaghetti and Sausage
This spaghetti recipe is light on the sauce, which is more typical of how spaghetti is actually served in Italy. If you would like more sauce, you may want to thin it with water, or add more canned tomatoes to the sauce.

- Whole Peeled Tomatoes, 1 large can
- Yellow or White Onion, 1 medium
- Garlic, 7 or 8 cloves
- Olive Oil, 2 or 3 tablespoons
- Red Wine, 1 to 1 1/2 cups
- Crushed Red Pepper Flakes
- Rosemary, 1 tablespoon, fresh-snipped or dry
- Oregano, 1 tablespoon, fresh-snipped or dry
- Basil Leaves, a handful of fresh or a tablespoon or so of dry basil
- Spaghetti (or linguine or buccatini or fettucine), 1 p0und
- Fresh Parmesan or Asiago
